Blueberry Protein Pancakes

Sunday mornings call for some Jack Johnson tunes and pancakes for breakfast. These are a better choice for than your traditional flapjacks. INGREDIENTS

TOPPINGS:

  • ¼ cup Blueberries
  • 1 tbsp Almond Butter
  • 1 tbsp Maple Syrup

PREPARATION

Using a fork, mix all the ingredients in a small bowl. You can add a few blueberries into the dough if you'd like. Pour mixture into a heated skillet (coated with coconut oil) flip after 2 minutes. Toppings: berries + almond butter + maple syrup. Optional: add a sprinkle of coconut sugar into the dough for added sweetness.
