Blueberry Protein Pancakes
Sunday mornings call for some Jack Johnson tunes and pancakes for breakfast. These are a better choice for than your traditional flapjacks. These grain-free and healthy pancakes are and excellent choice to prepare when you have a little extra time in the to spend in the kitchen. Cinnamon has the capacity to naturally stabilize blood sugar levels and it gives a sweet and warm taste to pancakes.
- 1 Organic Egg
- 2 tbsp Almond Flour
- 2 tbsp Unsweetened Almond milk
- ½ scoop of Vanilla Chai "Daily Essentials"
- ½ tsp Cinnamon
- ¼ cup Blueberries
- 1 tbsp Almond Butter
- 1 tbsp Maple Syrup
Using a fork, mix all the ingredients in a small bowl. You can add a few blueberries into the dough if you'd like. Pour mixture into a heated skillet (coated with coconut oil) flip after 2 minutes. Toppings: berries + almond butter + maple syrup. Optional: add a sprinkle of coconut sugar into the dough for added sweetness.
