The best part about these vegan pancakes is that they are made with a secret ingredient that may sound a little weird: carrots. Carrots are finely grated, mixed with some oat milk, and whisked into a batter with the usual pancake ingredients. Carrots provide a welcome sweetness and a little extra fiber to the pancakes, but don't worry, they still taste like fluffy pancakes. And of course, they’re topped with a quick and easy vegan caramel sauce, because everything is better with caramel.

Pancakes are a favorite breakfast food for many. They're delicious, quick and easy to make, and you can add anything you want to make them your own.  

They're also a great food for kids (and adults) who don't eat much protein or don't like eating their veggies. If you'd like more proteins and nutrients in your diet, but are tired of eggs and meat, this recipe is a great solution.

We love these carrot pancakes because it reminds us of the carrot cake made in Brazil that usually comes with a chocolate or caramel ganache on top, making this a great recipe for both breakfast or dessert!  Seconds anyone?



For pancakes:

  • ½ rounded cup (140g) oat flour
  • 2 scoops Essentials powder (Chocolate)
  • 1 tsp. cinnamon
  • ¼ tsp. ground ginger
  • ¼ tsp. ground nutmeg
  • 1¼ tsp. baking powder
  • ½ tsp. baking soda
  • ¾ cup (180ml) oat milk
  • 2 tbsp. almond butter
  • 2 tsp. lemon juice
  • 2 tbsp. maple syrup
  • 1 cup (110g) carrots, grated
  • 1 tbsp. coconut oil

For almond caramel:

  • ¼ cup (60ml) maple syrup
  • 2 tbsp. almond butter
  • pinch salt
