The best part about these vegan pancakes is that they are made with a secret ingredient that may sound a little weird: carrots. Carrots are finely grated, mixed with some oat milk, and whisked into a batter with the usual pancake ingredients. Carrots provide a welcome sweetness and a little extra fiber to the pancakes, but don't worry, they still taste like fluffy pancakes. And of course, they’re topped with a quick and easy vegan caramel sauce, because everything is better with caramel.
