GREEN BEANS & CHERRY TOMATO SALAD
This is a very simple, yet delicious recipe for a summery, healthy, and light lunch. The freshness of the beans and cherry tomatoes with a hint of lemon juice and olive oil is perfect for a hot day. Also, this salad is a great source of Vitamin C, fiber, and Vitamin A. We used baby green beans, but you can use any type of green beans, even frozen.

- 1 lb. (450g) green beans
- 1 cup (150g) cherry tomatoes
For the dressing:

- ⅓ cup (15g) coriander, chopped
- 2 tbsp. lemon juice
- ¼ cup (60ml) olive oil
