Vegetable stir fry is a quick, easy and delicious dish that is perfect for weekday dinners. It is a great way to get your kids to eat veggies and is just as delicious for adults. This dish is super versatile and can be made with any type of vegetable you have in the fridge. So, don't worry about what vegetables to use and just use what you have! The ingredients are pretty simple and can be made in under 30 minutes.

Although it’s called a “stir fry” it doesn’t have the ingredients of a traditional Chinese stir fry (no soy sauce, no ginger, etc.). It’s a delicious, healthy meal that can be made in less than 10 minutes!



For the sauce:

  • 1 tbsp. tahini
  • 1 tbsp. toasted sesame oil
  • 1 tsp. chickpea miso paste
  • 1 lime, juiced

For the stir-fry:

  • 6 ⅓ oz. (180g) rice noodles
  • 1 tsp. toasted sesame oil
  • 1 large carrot, spiralized
  • 1 zucchini, spiralized
  • ½ cup green peas, frozen
  • 1 tbsp. sesame seeds
  • coriander, to serve
