Have you ever had wild rice before? It has a very delicate nutty taste to it that compliments the other ingredients in this salad which include, rocket and tomatoes. The simplicity of the flavors means that there is no excuse not to try it. It’s perfect for the warmer weather that is on its way.

The Wild Rice, Tomato & Rocket Balsamic Salad is a wonderful way to add some flavour and texture to any meal. Combining the best of both worlds this dish combines the natural nutty taste of wild rice with the sweetness of tomatoes and the sharp tang of Balsamic Vinegar, topped with fresh rocket leaves.

The rocket (arugula) and the wild rice are high in protein & iron, while the tomatoes provide vitamin C, lycopene & fibre - a great clean eating meal!
