I’d say that, at first, the idea of blending cauliflower into a smoothie didn’t seem appetizing to me. And while I love a good nutritious smoothie, I also want it to, like… taste REALLY good.

I was surprisingly pleased that you literally can’t taste the cauliflower. The secret is to steam and freeze the night before the day you want to make this smoothie.

This smoothie is an excellent alternative if you want a low-carb breakfast or snack option or just want a break from the endless options of “banana” smoothies.

If you want to make this smoothie, all you need to do to prep is cut, steam, and freeze the cauliflower the night before you want to make it. If you don’t have cauliflower on hand, it will taste delicious with banana or zucchini too.

My recommendation is that you peel, steam, and freeze the zucchini. It’s a great way to sneak some veggies without compromising the flavor because that’s key!

WHAT YOU NEED

— 1/2 cup frozen stemmed Cauliflower florets(*)

— 1 scoop Vanilla Essentials Shake

— 1 tbsp almond butter

— 1 Medjool date pitted

— 1 1/2 cups unsweetened almond milk (**)

— 1/4 tsp cinnamon

*you can sub for one small ripe frozen banana or zucchini

**OR 1 cup unsweetened nut milk of your choice and 1/2 cup cold filtered water
